Cantina Lavis | Lagrein | 75cl
For over 70 years, the South Tyrolean vine has naturalized on the gentle slopes of Avisio. In this context, the Lagrein unleashes its full potential on the warmer and better exposed to the sun slopes that embrace the Municipality of Lavis. Strong purplish hues embellish the ruby red. Refined olfactory perceptions follow one another in the glass and the bouquet reveals intriguing notes of raspberries, blueberries and violets. On the palate it is warm and velvety, with soft and sweet tannins.Pairings

Cantina Lavis | Teroldego | 75cl
The cultivation of Teroldego, an autochthonous vine and a symbolic wine of Trentino, has very ancient origins. This variety with an incredible polyphenolic richness finds its perfect home along the gentle slopes of the Avisiane Hills, where excellent grapes ripen for the most typical and characteristic Teroldego. The unmistakable intense ruby red color is a prelude to the olfactory richness. The characteristic scent of violets then evolves into notes of plum and small berries. On the palate it is expressed with a soft and round body, with a particularly deep finish.Pairings

Cantina Lavis | Pinot Nero | 75cl
Cultivated in Trentino in very few particularly suitable areas, the noble French vine has found a habitat of choice in the foothill vineyards that embrace the municipalities of Lavis and Giovo. Known for its elegant nature, as demanding as it is seductive, Pinot Noir reaches the optimal level of maturity only after a long stay on the plant. Light ruby red in colour, in the glass it reveals an intense aroma, with hints of cherry and morello cherry, which slowly ends in a pleasant and typical aroma of red fruits of the undergrowth. In the mouth it is delicate and fruity and the dense and silky tannins give a full and pleasantly long taste.Pairings

Sauvignon Blanc finds perfect expression in the suitable plots where the marked temperature range between day and night allows the aromatic component of the grapes to be preserved. The vineyards that give life to the Sauvignon of La-Vis grow luxuriantly along the slopes at the gates of the Cembra Valley. Straw yellow in color with green reflections. In the glass the very intense and sweet notes of elderberry, peach and ripe fruit tickle the sense of smell. Here the clay-rich soils satisfy the nutritional needs of the vine and ensure the best expression of this demanding variety. An intensely aromatic, structured and full-bodied Gewürztraminer. Of a rather deep golden yellow color, it teases the nose with a floral and spicy bouquet, enriched by lively notes of cloves and nutmeg. Trentino is an area suited for the cultivation of Pinot Grigio, which has found its home here for decades. The vines are rooted in the foothills and valley floor vineyards surrounding Lavis and Gardolo, in loamy-sandy soils originating from the deposits of the Avisio stream and from the alluvial sediments of the Adige river. In the glass the intense golden yellow color shines. The nose reveals a warm and inviting aroma, rich in ripe fruit and honey. The use of cutting-edge technologies that exclude contact with oxygen in all phases of the winemaking process allows the aromatic component to be preserved, raising the value of this variety. The bright straw yellow color shines in the glass. On the nose there are inviting fruity hints of green apple and lychee in balance with floral essences that recall lily of the valley and jasmine. GRAPE VARIETY 100% Pinot Nero PRODUCTION AREA Oltrepò Pavese VIGNETO E TERRENO Vigneti siti in Santa Giuletta, e caratterizzati da terreno argillo-calcareo. L’età media delle viti è di 30 anni, e il sistema di allevamento è a guyot. PERIODO DI RACCOLTA Verso la fine di agosto / inizio settembre, l’uva viene raccolta e messa in cassetta con selezione esclusivamente manuale VINIFICAZIONE L’area vitata aziendale si estende per circa 20 ettari suddivisi in piccole parcelle. Le parcelle di Pinot Nero vengono raccolte e vinificate separatamente. Le uve vengono diraspate, ma non pigiate per mantenere l’acino intero. Alla macerazione pre-fermentativa a freddo, segue la fermentazione in vasche di acciaio inox a temperatura controllata. Brevi rimontaggi quotidiani. A fermentazione ultimata, segue la svinatura e la fermentazione malolattica in barriques. AFFINAMENTO Dopo circa 12 mesi in barriques, vengono selezionate e assemblate solo le migliori parcelle. GRAPE VARIETY 100% Pinot Nero PRODUCTION AREA Oltrepò Pavese WINEMAKING The winery’s vineyard area extends for about 20 hectares subdivided into small plots. The parcels of Pinot Noir are harvested and vinified separately, following different processes in order to enhance the characteristics of the terroir. The grapes are de-stemmed, but not pressed to keep the grape intact and on about 10% of the mass we proceed with the whole-cluster vinification. Cold pre-fermentative maceration is done before the alcoholic fermentation which occurs in stainless steel tanks at a controlled temperature with short pumping overs daily. At the end of the fermentation, the wine is racked, and the malolactic fermentation is done in steel tanks. AGING The wine is held about 6 months in stainless steel tanks until close to bottling, and then it rests for at least 2 months before release. ORGANOLEPTIC CHARACTERISTICS Clear and luminous ruby red colour. Fruity aromas, especially small red fruits, along with notes of undergrowth and a slight spiciness characterize the nose. GRAPE VARIETY 100% Chardonnay PRODUCTION AREA Oltrepò Pavese WINEMAKING After a soft pressing of the whole grapes, not de-stemmed, the must is left to decant in thermo-controlled steel tanks. A few days later, it is decanted and subdivided among terracotta amphorae and French oak barriques, where the alcoholic fermentation, lasting about 4 weeks, occurs. The malolactic fermentation is carried out only in part. AGING The wine is held for about 12 months sur lies among amphorae and barriques, during which frequent bâtonnages are done. After bottling, the wine rests for about 6 months before release. ORGANOLEPTIC CHARACTERISTICS Intense straw yellow color. On the nose, it opens on a large and complex bouquet in which ripe peaches, orange blossom, vanilla, flint, and eucalyptus honey can be recognized. On the palate, acidity and minerality give a delicate flavor that turns to sapidity. It is held on the lees in stainless steel tanks for about 6 months until just prior to bottling, and then it rests for at least 2 months before release. ORGANOLEPTIC CHARACTERISTICS Pale straw yellow color with green hues, on the nose, it is fresh floral with fruity aromas of pear, apple, and jasmine. A dry, medium-bodied white wine, with marked crispy acidity. On the palate, it is fresh, well balanced, with a pleasant lingering finish. FOOD PAIRINGS Ideal as an aperitif and in combination with fish appetizers and white meats, such as rabbit and poultry.
