Made from cow’s and goat’s milk, Occelli al Barolo cheese is aged for a very long time in the cellars of Valcasotto. Barolo DOCG wine, which transfers its complex aromas to the cheese. A hard cheese, it is left to perfect for a further two months in Langa pomace enriched with Barolo wine.
