Rustichella d’Abruzzo Penne Rustiche con Pesto alla Genovese

Ingredients:

320 g Rustichella d’Abruzzo PrimoGrano Penne

50 g Fresh Basil Leaves 

100 g Extra Virgin Olive Oil

1 tablespoon pine nuts 

70 g Grated Cheese

30 g Pecorino Cheese

Salt 

 

Preparation:

Take the fresh basil leaves and clean them. Then place them inside a glass with high edges. Add the pine nuts and the grated cheese. At this point, start blending by adding the olive oil flush enough to obtain a creamy and homogeneous sauce. Meanwhile, boil the penne in salted boiling water. Put the pesto in a large bowl, dilute it with a little cooking water, mix and add the pasta al dente. Stir to tie the dressing to the penne. Finish by decorating with fresh basil and a sprinkling of cheese if necessary.
