In his “Naturalis historia”, Pliny the Elder, mentions a “rubeola” produced in the district of the city of Mondovì (Cuneo). Beppino Occelli has reinterpreted the ancient recipe and has called this cheese “Robiola Mondovì”. It is optimal served with the red wine Dolcetto delle Langhe Monregalese. It is ideal served on seasonal salads or at the end of a meal as a “stove” cheese on slices of toasted bread.
