Processed at low temperature to obtain a white paste. When the mass is still plastic, truffles are added to it. The molds age for about 90/120 days at the right humidity and temperature. The right balance allows you to appreciate both the intensity of the truffles and the sweetness of the pecorino. It tastes great in combination with white wine.
