Pecorino cheese made exclusively from sheep's milk, native to the Sienese countryside and the surrounding hills, poor in grass but rich in essential and particularly aromatic herbs: wild mint, thyme, arugula. Production takes place a few hours after the milk is obtained using traditional methods without the addition of preservatives. The maturation process is slow and every effort is made to enhance its sweet and delicate taste.
