After 60 days from the moment of processing, the best cheeses are transferred to natural rock caves. Here they are treated with linseed oil and then rest on pine wood. The natural conditions of the cave make Pecorino cheese slowly age, acquiring a unique taste and a strong personality. The crust acquires an intense rusty color, but the cheese inside is white, compact with a tendency to crumble.
