Gennari | Oro Nero

Oro Nero is a raw milk cheese, with a semi-hard paste, slow maturation, cylindrical in shape, slightly convex or almost straight edges, with full faces slightly edged. The rind is "black" in color coated with a substance suitable for food treatment; the paste has a minutely grainy structure with a flake fracture... It is produced with the milk of family cows and is aged for just under nine months.
